Our Beginning

El Barco’s story began with a spark of inspiration when owner Juan Bacilio Vaca discovered the former Stumpy’s location in Rushford. After nearly purchasing a building in another town, something about Rushford spoke to him, and he knew this was the right place for his new venture. With years of experience as a chef and restaurateur, Juan, alongside his brother Jesus, set out to create a restaurant that would blend authentic Mexican flavors with local favorites. Drawing from his experience running El Texano in Arcadia, Wisconsin, Juan began transforming the space with vibrant colors, a stunning mural, and a vision to make El Barco a cornerstone of the Rushford community.

The restaurant has become a lively, welcoming spot where guests can enjoy a unique mix of Mexican specialties and beloved local dishes like breakfasts, pizzas, and Friday fish fries. Juan has brought together a team of well-trained staff, some of whom he personally trained at his other restaurant, to ensure every customer receives exceptional service. Looking ahead, Juan has exciting plans for El Barco. With the upcoming arrival of a liquor license, the restaurant will soon offer margaritas, and Juan envisions lively bar nights on Fridays and Saturdays in the basement. Plans are also in motion to install a large outdoor grill on the patio, perfect for roasting whole hogs and hosting special events. Juan is focused on making El Barco a long-term success by continuing to listen to his customers’ requests and expanding the menu with new and innovative dishes. As El Barco grows, Juan remains committed to his original mission: serving delicious food that makes people happy and keeps them coming back for more.
